Fake Fudge

No Bake Protein Bars


1 cup nut butter—half almond and half peanut seemed best

              8 ounces = ½ jar of TJ almond butter—or ¼ jar peanut butter and almond butter mix

              Put in large salad bowl and heat x 30 seconds

                             Stir and then heat another 15 seconds

Stir in 1 tbl cocoa powder and 1 tsp vanilla extract

Stir in 1 cup protein powder

              ½ cup vanilla

              ½ cup chocolate

Mix in ½ cup flaxseed meal

Mix in ¼ cup maple syrup—add more as needed to make less dry

Mix in 1 cup dry rolled oats

Mix in 3 to 4 diced Medjool dates

              8 diced prunes was even better

Maybe add pepitas or almond slices


Still pretty dry?—add a little more maple syrup


Lightly olive-oiled 8 x 8 glass pan

Pressed into glass pan and put in refrigerator

After chilled--cut into squares
