Coleslaw


Make your own Coleslaw sauce --shake in a mason jar

or beef it up with store bought coleslaw sauce—2 Tablespoons coleslaw dressing

Vegan Mayo and/or olive oil—?substitute some yogurt for mayo?

              2 Tablespoons mayo—(vegan mayo)

              Maybe substitute 2 tablespoons yogurt for one of the Mayo tablespoons

Dijon mustard or powder mustard

              1 Tsp powdered mustard and 1 to 2 tablespoons Dijon mustard

Apple vinegar (or balsamic vinegar) 2 tablespoons each apple and wine vinegar

Lime Juice—about 1 teaspoon

Pepper—white pepper worked great!—1/2 to 1 teaspoon white pepper

1 teaspoon garlic powder

Sweetener? Sugar or honey or stevia?

Celery seed?

For Asian flare—sesame oil and rice vinegar

Maybe try less coleslaw dressing/mayo/Dijon mustard to make less creamy and less fat

              And less calories


buy pre-prepared cabbage sliced for coleslaw

or

Chop mostly green and some red cabbage—

              Shredding did not work

 

mix sauce with cabbage—shake and then let sit in refrigerator for 1 hour to soak

              Soak overnight in refrigerator is even better

 

Can add

Raisons/Dried Cranberries

Chopped/ground walnuts

Shredded carrots

Sliced radishes

Diced apples

Slice broccoli

Diced celery

Diced/sliced red onion

Potato Salad


Shake In Mason jar—to make the “sauce”

2 Tablespoons mayo

2 Tablespoons Dijon mustard

3 Tablespoons yogurt

1 teaspoon to 1 tablespoon lemon juice

1 teaspoon to 1 tablespoon wet garlic (or garlic powder)

½ teaspoon white pepper

½ teaspoon dill

2 tablespoons wine vinegar (or apple cider vinegar)

1 Teaspoon powdered yellow mustard

1 teaspoon parsley


In tupper ware to shake to mix with mason jar

Dice Several cooked potatoes—baked or boiled—fork tender

Diced celery sticks

Diced dill pickles

Fresh ground black pepper

Diced onion
