Tofu Spaghetti Sauce


Dice two onions and celery sticks and soften on high heat in pan

sauté with some water or vegetable broth or red wine

when starting to soften, add crumbled extra firm tofu

season tofu with

1 teaspoon black pepper

2 teaspoons of Italian Seasoning

turn down to medium heat

add 8 or 16 ounces of tomato sauce (no salt and organic is best)

add 2--16-ounce cans of no salt added stewed tomatoes

3 teaspoon wet garlic


simmer and add

Sliced mushrooms


add more pepper and Italian seasoning as needed for taste

Bean-Tofu Chili


1 or 2 large onion diced

3 diced garlic cloves (3 frozen cubes from trader joes)

1 pound superfirm organic tofu


Sauté/soften 1.5 large while onion (diced)

              Can add diced celery and soften onion and celery together

              Start high—about 8 out of 10

              Keep root side of onion intact when dicing—then discard

             

Add crumbled superfirm tofu (drain and rinse before crumbling)

              On top of added tofu put

2 tsp Cumin

2 tsp chili powder

½ teaspoon black pepper

              And then stir in


Turn down to simmer—about 3 out of 10 and as slow boils—slowly dial back to 1 or 2

              Add 1 or 2 x 15 ounce cans diced tomatoes or stewed tomatoes

              2 x 15 ounce cans of low salt black beans

              1 can 8 ounce tomato sauce


Optional

Jalapeños

½ jar of salsa

I added 2 x 8 ounce package of mushrooms

1 added an additional (3rd teaspoon of chili powder

Black pepper – I added ½ teaspoon

Cocoa powder—I added ½ teaspoon

½ bag frozen corn—add near the end if taste and need something sweeter


Consider substituting one can of red kidney beans for the 2nd can of black beans

              Or just add a can of red kidney beans

Bean Dip

or Bean Paste—can also put on wraps for quick burrito

              Garlic—6 cloves

              2 or 3 tablespoons salsa

              Chopped onion—can soften in fry pan for kill step

              Juice of 1 or 2 limes—more lime juice is more better—add more before serving

              ½ teaspoon crushed red pepper

              ½ tsp cumin

              Consider Adding rice to blended mix made it thicker and chewier

Consider adding cilantro and avocado before serving

              Add more salsa before serving and heat in microwae

Pressure cook (presoaked) black beans rocking for 5 minutes with rocking cap makes mush

              Could also just bring up to rock and then cool for an hour in pressure cooker sealed

              Soak overnight and change water once

              Put in pressure cooker—cover with 1 inch water—not over half filled pressure cooker

              Check that you can blow through pressure cooker vent

              1 teaspoon olive oil

              Cook on 8 until rocking and then put down to warm to 2 to rock for 5 minutes

Put in bullet—try immersion blender when you get it

              Can also use blender with masher stick
